Instructions

  1. Preheat the oven to 350 F and coat a shallow baking dish with cooking spray.

  2. Prepare shrimp by slicing along the outside curve, peeling all but the tail, deveining, and making another deep cut along the inside curve.

  3. Rinse and drain the prepared shrimp.

  4. Combine lemon juice, parsley, and ginger in a small bowl. Pour half into a shallow dish with the shrimp, toss to coat, and marinate for 20 minutes at room temperature, reserving the rest.

  5. In a skillet, heat oil and butter over medium heat. Cook garlic until golden (2-3 minutes), then add breadcrumbs and cook until lightly browned (3 minutes).

  6. Transfer the breadcrumb mixture to a bowl, stir in lemon juice and half of the remaining parsley.

  7. Remove shrimp from marinade, flatten, and place a generous tablespoon of stuffing onto each.

  8. Arrange stuffed shrimp in the baking dish and drizzle with reserved marinade.

  9. Bake for 10 minutes until shrimp are opaque.

  10. Heat the broiler and broil shrimp 4-6 inches from heat for 2-3 minutes until the stuffing is lightly browned.

  11. Garnish with the remaining parsley and serve.
