Instructions

  1. Preheat the oven to 350 F and generously grease a muffin tin.

  2. Cut fish into strips, then line each muffin cup with fish and lightly sprinkle with salt.

  3. Sauté onion and celery in 6 tablespoons butter until tender.

  4. Combine the sautéed vegetables and butter with salt, black pepper, sage, and bread; add hot water if the mixture is too dry.

  5. Spoon the stuffing into each fish-lined muffin cup.

  6. Dot each stuffing center with 1/2 teaspoon butter and sprinkle with chopped parsley.

  7. Bake for 30 minutes, or until the fish flakes easily.

  8. Serve with lemon wedges, if desired.
