Instructions

  1. Preheat oven to 400 F.

  2. Prepare cod or haddock by scaling, washing, and snipping fins; pat dry, lightly salt, and set on a greased baking sheet.

  3. Fill the fish cavity with stuffing; put excess stuffing in a separate casserole dish. Close the cavity with skewers.

  4. Place bacon strips diagonally over the fish, ensuring cut ends are covered if the head was removed.

  5. Bake for 10 minutes per inch of fish thickness, usually 40-50 minutes.

  6. Remove bacon 10 minutes before cooking concludes to crisp the fish skin.

  7. Carefully move the baked fish to a serving platter. Remove skewers and allow stuffing to spill out. Arrange lemons and potatoes around the fish; serve at once.
