Baked Stuffed Catfish Fillets

Instructions

  1. Preheat the oven to 350 F and lightly grease a baking dish.

  2. Season fish with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon lemon juice.

  3. Cook bacon in a skillet over medium heat until almost crisp; drain bacon and reserve 1 tablespoon drippings.

  4. Sauté chopped celery and onion in the reserved bacon drippings for 2-4 minutes until softened.

  5. In a bowl, combine the cooked vegetables, breadcrumbs, cream cheese, 2 teaspoons lemon juice, parsley, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

  6. Divide the stuffing into four portions; place one portion on each fillet and roll the fish around it.

  7. Wrap two slices of bacon around each rolled catfish fillet, securing with toothpicks if desired.

  8. Arrange the stuffed fish rolls in the prepared baking dish and sprinkle with paprika.

  9. Bake for 15-20 minutes, until the fish flakes easily.
