Baked Stuffed Acorn Squash With Beef and Tomatoes

Instructions

  1. Preheat the oven to 350 F and line a 9x13x2-inch baking pan with greased foil.

  2. Halve the acorn squash, remove seeds, then spray cut sides with oil. Place cut-side down in the pan with 1/2 inch of water, cover, and bake for 45-55 minutes until tender.

  3. In a skillet, sauté ground beef with bell pepper and onion until no longer pink; drain drippings. Stir in pepper, salt, tomatoes, parsley, and optional cinnamon, then cook until hot.

  4. Fill the cooked squash halves with the beef mixture and arrange them in the baking pan.

  5. Bake for 20-25 minutes, or until the squash is heated through.
