Baked Rice With Spinach and Parmesan Cheese

Instructions

  1. Preheat the oven to 400 F.

  2. Grease a 3-quart baking dish.

  3. Finely chop the onion. Heat olive oil in a saucepan, sauté onion until translucent, then add 4 1/2 cups chicken stock and bring to a simmer.

  4. Rinse the rice.

  5. Combine rinsed rice, simmering chicken stock, and onion mixture in the baking dish; stir to blend.

  6. Bake uncovered for 25 minutes, stirring occasionally, until liquid is mostly absorbed; add more stock if needed.

  7. Roughly chop spinach and finely chop herbs.

  8. Remove from oven, stir in pepper, spinach, herbs, and Parmesan; season with salt if needed and add more stock if dry.

  9. Cover tightly with foil and bake for 5 more minutes, until rice is tender and spinach is wilted.

  10. Fluff with a fork before serving.
