Baked Pumpkin Puree

Instructions

  1. Preheat the oven to 350 F.

  2. Slice off the pumpkin top, remove stringy membranes and seeds, then cut the pumpkin into large pieces.

  3. Arrange pumpkin pieces in a roasting pan with 1/2 cup water, cover with foil, and bake 45-60 minutes until tender.

  4. Once cooled, scoop the softened pulp from the skin into a food processor or heavy-duty blender.

  5. Blend until uniformly pureed.

  6. Use immediately, store refrigerated for 3 days, or freeze for 10-12 months.
