Instructions

  1. Preheat the oven to 450 F and place a large cookie sheet inside.

  2. Peel, cut, and shred the potatoes and onion.

  3. Place the shredded potatoes and onion in a colander and squeeze out all excess moisture.

  4. Transfer the mixture to a large bowl, then add flour, egg whites, and black pepper, combining thoroughly.

  5. Remove the hot cookie sheet, coat it with nonstick spray, and arrange 2 to 2 1/2-inch flattened potato rounds on it, spaced apart.

  6. Return the sheet to the oven and cook for 7 to 8 minutes per side until the latkes are crisp and golden.

  7. Serve hot with sour cream and applesauce.
