Baked Polenta With Parmesan Cheese
A simple baked polenta dish, enriched with butter and Parmesan, offers a versatile alternative to potatoes or rice.

Instructions

Preheat the oven to 350 F.

Butter a 7.5 x 4.5-inch loaf pan.

Combine 1 cup cold water, salt, and polenta meal in a bowl.

Bring the remaining water to a boil in the top of a double boiler.

Gradually stir the polenta mixture into the boiling water and cook for 5 minutes.

Fill the bottom of the double boiler with water, bring to a boil, then reduce to a simmer.

Place the top of the double boiler over the simmering water and cook for 4 more minutes, stirring often.

Pour the cooked polenta into the prepared loaf pan, cool for 10 minutes at room temperature, then refrigerate for 1 hour until firm.

Remove chilled polenta from the pan, slice, and arrange on a greased shallow baking dish.

Pour melted butter over the polenta slices, sprinkle with Parmesan, and bake uncovered for 20 minutes.
