Baked Pineapple Chicken Breasts

Instructions

  1. Preheat oven to 350 F (180 C).

  2. Combine flour, salt, celery salt, garlic powder, onion powder, and nutmeg; dredge chicken breasts thoroughly in this mixture.

  3. Melt butter in a heavy skillet over medium heat; brown dredged chicken breasts on both sides until golden.

  4. Arrange browned chicken in a 9x13-inch baking dish.

  5. Whisk together pineapple juice, soy sauce, and sugar; pour this sauce over the chicken.

  6. Cover the dish with foil and bake for 30 minutes. Remove foil, baste, and continue baking for 20 to 30 minutes more, or until chicken is tender and reaches 165 F (74 C).

  7. For a thicker sauce, remove chicken from the pan and keep warm. Strain pan juices into a saucepan and bring to a simmer. Mix cornstarch with 2 tablespoons cold water, then stir into the simmering sauce; cook until thickened and clear.

  8. Serve chicken with the sauce.
