Preheat the oven to 375 F. Line a 9x13-inch baking pan with lightly greased foil.

Trim and skin chicken as desired, then season with salt and pepper and place in the prepared pan.

Combine pesto, garlic, and lemon juice, then rub the mixture evenly over the chicken pieces.

Cover the pan tightly with foil and refrigerate for 1 to 2 hours.

Remove foil, drizzle chicken with olive oil, and bake for 55 to 65 minutes, until internal temperature reaches 165 F.
