Instructions

  1. Preheat the oven to 375 F and spray a baking sheet.

  2. Pound turkey cutlets thin between plastic wrap, then season with salt and pepper.

  3. Prepare three separate bowls: one with flour, one with pulsed breadcrumbs, Parmesan, parsley, and basil, and one with whisked mustard and eggs.

  4. Dredge each cutlet in flour, then the egg mixture, then the breadcrumb mixture, and place on the prepared baking sheet.
