Baked Panko and Parmesan Zucchini Fries

Preheat the oven to 425 F and line a baking sheet with foil, then spray with nonstick cooking spray.

Slice zucchini into 4-inch long, 1/2-inch thick strips.

Toss the zucchini strips with flour in a bowl.

Pulse panko, Parmesan, and seasonings in a food processor until fine.

Place egg substitute or eggs in a bowl. Dip floured zucchini strips into the egg mixture, then toss with the crumb mixture.

Arrange coated zucchini on the prepared baking sheet and bake for about 15 minutes until browned.
