Baked Panko and Parmesan Zucchini Fries

Instructions

  1. Preheat the oven to 425 F and line a baking sheet with foil, then spray with nonstick cooking spray.

  2. Slice zucchini into 4-inch long, 1/2-inch thick strips.

  3. Toss the zucchini strips with flour in a bowl.

  4. Pulse panko, Parmesan, and seasonings in a food processor until fine.

  5. Place egg substitute or eggs in a bowl. Dip floured zucchini strips into the egg mixture, then toss with the crumb mixture.

  6. Arrange coated zucchini on the prepared baking sheet and bake for about 15 minutes until browned.
