Baked or Sautéed Lyonnaise Potatoes

Instructions

  1. Thinly slice one onion.

  2. Melt 4 tbsp butter in a large skillet; cook onion over medium-low heat for 6-8 minutes until browned. Remove and set aside.

  3. Peel and slice potatoes into 1/4 to 1/2 inch rounds.

  4. Start boiling water in a saucepan, add potato slices, and boil for 2 minutes. Drain thoroughly.

  5. To complete via Stovetop Method: Add 2 tbsp butter and olive oil to the skillet over medium-high heat. Cook drained potatoes for 12-15 minutes, stirring until browned. Return onion to the skillet, heat through, then transfer to a warm platter, season with salt, pepper, and fresh parsley.

  6. To complete via Oven Method (alternatively): Preheat oven to 400°F. Layer cooked potatoes and browned onion in an oven-safe skillet, sprinkling with salt and pepper. Bake for 12-15 minutes until tender and golden brown. Transfer to a warm platter, season with salt, pepper, and fresh parsley.
