Baked Mediterranean Rice

Instructions

  1. Preheat oven to 375 F.

  2. Coat an 11 x 13-inch casserole dish with cooking spray, then combine rice, onions, and melted butter in it.

  3. Mix oregano, basil, and salt into chicken broth, then pour over the rice and arrange halved tomatoes on top.

  4. Bake for 30 minutes, or until rice is al dente.

  5. Remove from oven; fold in mozzarella and spinach until well distributed.

  6. Top with Parmesan and parsley, then cover with foil and rest for 5 minutes before serving.
