Baked Lunar New Year Cake (Nian Gao)

Instructions

  1. Preheat the oven to 350F and grease a 9x13-inch baking pan.

  2. In an electric mixer, combine all ingredients except the red adzuki beans; mix 2 minutes at medium speed, then 2 minutes at high speed.

  3. Sprinkle extra Mochiko flour into the pan, then pour in half of the prepared batter.

  4. Spread the red adzuki beans over the batter, optionally mixing them with some batter if too thick.

  5. Pour the remaining batter over the beans.

  6. Bake for 40 to 50 minutes, or until a chopstick inserted into the center comes out clean.
