Baked Lemon Garlic Cod

Instructions

  1. Preheat the oven to 400 F and lightly coat a baking dish with cooking spray.

  2. Pat cod dry, place in the dish, and season with salt and pepper.

  3. In a skillet, melt butter and oil over medium-low heat; sauté garlic for 1 minute, then swirl in lemon juice and remove from heat.

  4. Drizzle the lemon-garlic mixture over the fish.

  5. Bake uncovered for approximately 12 minutes, or until fish flakes easily.

  6. Serve fish with pan juices, garnished with parsley and a lemon wedge.
