Baked Italian Skillet Eggs

Instructions

  1. In a large skillet, cook sausage in oil over medium heat for 5-10 minutes, breaking it into crumbles until crispy.

  2. Stir in garlic and red pepper flakes, cooking for 1 minute.

  3. Add canned tomatoes with their juices, salt, and pepper. Increase heat to medium-high and bring sauce to a boil.

  4. Reduce heat to low, simmer for 5 minutes, then season with additional salt if desired.

  5. Create four wells in the sauce and crack an egg into each.

  6. Increase heat to medium, then sprinkle mozzarella and Parmesan around the eggs.

  7. Cook for 7-10 minutes, rotating the pan as needed, until egg whites are set and yolks are runny.

  8. Garnish with parsley once eggs are cooked and cheese is melted.

  9. Serve with toast or bread.
