Baked Ham and Cheese Quesadilla

Preheat the oven to 425 F.

Spray a cookie sheet, then place two tortillas on it, topping each with 1/4 cup cheese.

Layer ham, diced tomatoes, and green onion (if using) over the cheese, followed by the remaining 1/4 cup cheese.

Season with pepper, cover with the remaining tortillas, and brush the tops with vegetable oil.

Bake for 10 to 12 minutes until browned.

Cut into wedges and serve with mustard or mayonnaise.
