Baked Haddock With Creamy Crab Sauce

Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Melt 4 tablespoons of butter in an 11 x 7-inch baking pan, then arrange haddock fillets, turning to coat, and season with salt and pepper.

  3. Bake haddock for 25 to 30 minutes, or until it flakes easily.

  4. Meanwhile, in a saucepan, melt 2 tablespoons of butter over medium-low heat, stir in flour until smooth and bubbly, and cook for 1 minute.

  5. Add green onions and 2 tablespoons of parsley to the flour mixture, gradually stir in half-and-half, and cook, stirring constantly, until thickened.

  6. Stir in crabmeat and season the sauce with salt and pepper.

  7. Arrange the baked haddock on a platter and top with the creamy crab sauce.

  8. Garnish with fresh chopped parsley if desired.
