Instructions

  1. Preheat the oven to 425 F. Lightly oil or line a 9x13-inch baking dish.

  2. Combine minced garlic, oregano, salt, chili powder, cumin, pepper, and olive oil in a small bowl; mix to form a paste.

  3. Trim excess skin and fat from 4 chicken leg quarters. Arrange them in the prepared dish and rub with the garlic-spice mixture.

  4. Pour 1/2 cup chicken broth (or a 1:1 mixture of broth and dry white wine) into the bottom of the baking dish.

  5. Bake uncovered for 40 to 50 minutes, or until the chicken's internal temperature reaches 165 F.
