Instructions

Preheat the oven to 425 F. Lightly oil or line a 9x13-inch baking dish.

Combine minced garlic, oregano, salt, chili powder, cumin, pepper, and olive oil in a small bowl; mix to form a paste.

Trim excess skin and fat from 4 chicken leg quarters. Arrange them in the prepared dish and rub with the garlic-spice mixture.

Pour 1/2 cup chicken broth (or a 1:1 mixture of broth and dry white wine) into the bottom of the baking dish.

Bake uncovered for 40 to 50 minutes, or until the chicken's internal temperature reaches 165 F.
