Baked Frank's Buffalo Chicken Wings

Preheat the oven to 450F and spray a baking sheet with cooking spray.

Split whole chicken wings into three pieces if needed. Pat 5 pounds of wings dry, season with 1/4 teaspoon salt, and arrange them on the prepared baking sheet, using two if necessary to avoid crowding.

Bake wings for 20 minutes, then flip them and continue baking for 15-16 minutes until thoroughly cooked and browned.

While wings bake, combine 1 cup hot sauce, 1/2 cup unsalted butter, 2 tablespoons white vinegar, and 1 tablespoon brown sugar in a saucepan over medium heat. Simmer, stir, remove from heat, and add cayenne pepper to taste.

Transfer baked wings to a large bowl. Pour the sauce over the hot wings, tossing to coat completely. Let them rest for 10 minutes, tossing once more.

Toss wings one final time, then serve immediately with celery and blue cheese dressing.
