Instructions

  1. Preheat the oven to 325 F/165 C and grease a shallow baking dish with solid butter.

  2. Cut 1 1/2 pounds flounder fillets into 4 equal portions, arrange them in the dish, and season with 1 teaspoon salt and 1/8 teaspoon black pepper.

  3. Combine 1/4 cup melted unsalted butter, 2 tablespoons lemon juice, and 2 teaspoons minced onion; pour this mixture over the fish and sprinkle with 1 teaspoon paprika.

  4. Bake for 15 to 25 minutes, or until the fish flakes easily with a fork; prepare the optional garlic aioli during this time.

  5. For the optional garlic aioli, crush 2 garlic cloves, then combine with 1/2 cup mayonnaise, 2 tablespoons olive oil, and 1 tablespoon lemon juice; season with salt, stir well, cover, and chill.

  6. Garnish the baked fish with 1 tablespoon chopped parsley and lemon slices or wedges, then serve with the prepared garlic aioli if desired.
