Baked Flounder Florentine

Instructions

  1. Preheat oven to 350 F.

  2. In a skillet, melt 2 tablespoons butter; sauté onion until translucent. Stir in spinach, oregano, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.

  3. Place 1 1/2 tablespoons of the spinach mixture onto each flounder fillet, then roll them.

  4. Arrange fish rolls seam-side down in a baking dish with wine. Cover and bake for 25 minutes.

  5. Drain the baking liquid, reserving 1/2 cup; keep fish warm.

  6. In a saucepan, melt 3 tablespoons butter over medium-low heat. Stir in flour, remaining salt, pepper, and mustard.

  7. Whisk in the reserved liquid and milk. Cook until thick and bubbly.

  8. Pour sauce over the stuffed flounder rolls. Sprinkle with Parmesan and paprika before serving.
