Baked Feta Pasta

Instructions

  1. Preheat oven to 400 F.

  2. In a 9x13-inch casserole dish, center the feta block, surround with artichoke hearts and their liquid, then top with roasted red peppers, garlic, red pepper flakes, oregano, salt, pepper, and olive oil.

  3. Bake uncovered for 30 minutes, or until feta softens.

  4. Simultaneously, boil a large pot of salted water.

  5. Cook pasta to al dente, reserving 1 cup of pasta water.

  6. Stir spinach and cream into the casserole dish, then bake for another 10 minutes.

  7. Stir the feta, spinach, and cream to form a sauce; add reserved pasta water as needed if too dry.

  8. Add pasta, then toss until coated.

  9. Serve immediately, garnished with chopped parsley and Parmesan.
