Baked Chiles Rellenos

Instructions

  1. Preheat the oven to 400 F.

  2. Optionally, roast chiles over a gas burner or under a broiler until blistered, then steam them covered for 15 minutes to easily remove skins.

  3. Slit each chile halfway down from the stem and remove seeds.

  4. Heat oil in a frying pan, then cook onion and garlic until fragrant.

  5. Prepare filling: for meat, brown ground meat with onion and garlic, drain fat, and season with salt and lime; for cheese, mix cooled onion and garlic with cheese.

  6. Stuff chiles with the chosen filling, place in a lightly oiled baking pan, and bake for 20 minutes (roasted) or 30-40 minutes (unroasted) until soft and hot.

  7. Meanwhile, prepare the creamy spicy tomato sauce.

  8. Remove chiles, top with sauce, and serve with extra sauce.
