Baked Chickpea Fritters (Pareve)

Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.

  2. Process chickpeas, onion, scallions, garlic, cumin, and coriander in a food processor until coarsely chopped.

  3. Add 3 tablespoons of flour and baking powder; pulse briefly to combine without overprocessing, maintaining some texture.

  4. Transfer the mixture to a bowl, stir thoroughly, and adjust consistency with an additional tablespoon of flour if too wet, or a little olive oil if too dry.

  5. Lightly grease the baking sheet with olive oil. Shape walnut-sized pieces of the mixture into balls, then flatten into patties.

  6. Place the patties on the prepared pan and drizzle with olive oil.

  7. Bake for 15 minutes, carefully turn, and bake for an additional 10 minutes, or until golden and firm.
