Baked Chicken With Yellow Rice

Instructions

Preheat the oven to 400 F (200 C) and soak saffron threads in 1 tablespoon of hot water for 10 minutes.

Sauté bell pepper and onion in olive oil in a large skillet until tender.

Transfer sautéed vegetables to a large shallow baking dish, then add all remaining ingredients except chicken and salt, mixing thoroughly.

Season chicken pieces with salt and place them skin-side up on top of the rice mixture.

Cover the dish tightly and bake for 1 1/2 hours, or until the rice is tender and chicken reaches 165 F (74 C).

Remove the cover and continue baking for 5 to 10 minutes to brown the chicken.
