Baked Chicken With Spinach

Instructions

  1. Preheat oven to 350 F and lightly grease a 9x13x2-inch baking pan.

  2. Pound chicken breasts to an even thickness, then season with Creole seasoning, pepper, and salt if needed.

  3. Place spinach in the prepared baking dish, season with salt and pepper, and add chicken broth.

  4. Arrange seasoned chicken over spinach, then sprinkle with diced tomato and sliced green onions.

  5. Cover with foil and bake for 20 minutes.

  6. Uncover and bake for another 10 to 15 minutes, until chicken reaches 165 F internal temperature.

  7. Optionally, add Parmesan or mozzarella cheese 5 minutes before the end of baking, then serve hot.
