Baked Chicken With Bacon and Pepper Jack Cheese
A simple dish features boneless chicken breasts topped with barbecue sauce, bacon, and pepper jack cheese.

Preheat the oven to 375 F and grease a baking dish.

Cook bacon until almost crisp, then drain on paper towels.

Pat chicken dry, pound each breast to 1/4 to 1/2 inch thickness, and dredge in flour.

Melt butter and olive oil in a skillet over medium heat; briefly stir in a garlic half, then remove.

Cook chicken in the skillet for about 5 minutes per side until browned and cooked through (165 F).

Arrange chicken in the baking dish, spread 1 tablespoon barbecue sauce on each, top with bacon slices, and then a slice of pepper jack cheese.

Bake for 5 to 6 minutes, until the cheese is melted.

Garnish with cilantro if desired before serving.
