Baked Chicken and Rice

Instructions

  1. Preheat the oven to 400 F and coat a baking pan with cooking spray.

  2. Arrange chicken breasts in a single layer in the prepared pan.

  3. In a bowl, combine the uncooked rice, chicken broth, tomatoes with their liquid, onion, garlic, and oregano, then stir in the chopped spinach.

  4. Spoon the rice mixture evenly over the chicken.

  5. Cover the pan tightly with foil and bake for 45 minutes, until the chicken is cooked through (165 F) and the rice is tender.
