Baked Chicken and Potatoes

Instructions

  1. Preheat oven to 425 F and spray a 9x13 inch baking dish.

  2. Toss potatoes with 1/4 cup olive oil, salt, pepper, and garlic powder; spread into the prepared dish and bake for 10 minutes.

  3. Place chicken on top of the potatoes, brush with the remaining 1 tablespoon olive oil, season with salt and pepper, then bake for 18 to 20 minutes until the chicken is cooked through.

  4. Sprinkle with Parmesan cheese and bake for approximately 2 minutes until the cheese melts.
