Baked Cheesy Spinach Balls

Instructions

  1. Preheat oven to 350 F.

  2. Cook and thoroughly drain the spinach.

  3. In a large bowl, combine warm spinach, softened butter, stuffing crumbs, Parmesan, and optional onions, nuts, bell pepper, and cayenne. Mix well and season with salt, pepper, and nutmeg.

  4. Whisk eggs, add to the spinach mixture, combine thoroughly, and chill for 30 minutes, covered.

  5. Line a baking sheet with parchment or cooking spray. If using, place breadcrumbs in a shallow dish.

  6. Form the chilled mixture into small balls using a rounded teaspoon, dampening hands as needed.

  7. Roll each ball in breadcrumbs to coat, then place on the prepared baking sheet with 1/2-inch spacing.

  8. Bake for 15-20 minutes, until firm.
