Bailey's Irish Cream White Fudge

Instructions

  1. Line an 8x8 or 9x9 inch pan with foil and spray with nonstick spray.

  2. Combine butter, sugar, cream, Irish cream liqueur, and salt in a saucepan over medium-high heat, stirring until ingredients melt.

  3. Bring the mixture to a boil, stirring frequently and brushing down pan sides to prevent sugar crystals.

  4. Insert a candy thermometer and cook until it reads 235 F (114 C).

  5. Remove from heat; vigorously stir in white chocolate chips and marshmallow cream until melted and smooth, briefly reheating if needed.

  6. Stir in vanilla.

  7. Pour into the prepared pan and smooth into an even layer.

  8. Let set at room temperature for 3-4 hours, or refrigerate for 1-2 hours.

  9. Cut into 1-inch pieces and store in an airtight container.
