Baião de Dois (Brazilian Black-Eyed Peas and Rice) Recipe

Instructions

  1. Chop bacon, cook in a heavy saucepan until crispy, then set aside 1/4 for garnish.

  2. Sauté chopped onion in the remaining bacon grease until soft, then add garlic and cilantro, cooking for several minutes.

  3. Add black-eyed peas and water to the saucepan, cover, and simmer for 30-40 minutes until tender.

  4. Once peas are tender, stir in rice and 1 cup stock; cover and simmer on low until rice is cooked, adding more stock as needed, then season with salt and pepper.

  5. Cut mozzarella into 1-inch cubes and stir into the dish just before serving to melt.
