Bacon-Wrapped Pork Loin With Brown Sugar Glaze

Instructions

  1. Preheat oven to 350 F.

  2. Combine chili powder, paprika, salt, black pepper, cumin, and cinnamon for the rub.

  3. Place pork loin in a roasting pan, apply the rub, and cover with halved bacon strips.

  4. Roast for 1.5 to 2 hours, or until the pork reaches an internal temperature of 150 F.

  5. Near the end of roasting, prepare the glaze by simmering brown sugar, flour, cider vinegar, and dry mustard in a saucepan for 1 minute.

  6. Spoon the prepared glaze over the pork and return it to the oven.

  7. Continue roasting for 15 to 20 minutes, or until the pork reaches 160 F.

  8. Remove the roast, tent with foil, and allow it to rest for 5 to 15 minutes before carving into slices.
