Instructions

Preheat oven to 375F (190C).

Cook bacon in a skillet over medium heat for 4-6 minutes until crisp; remove, drain, crumble, and set aside.

Drain most bacon grease from the skillet, then add butter and olive oil.

Sauté chicken breasts in the skillet for 8-10 minutes, turning once, until nearly cooked (150 F internal temperature).

Transfer the chicken to a 13" x 9" baking dish.

In the same skillet, cook onion and garlic for 5-6 minutes until softened, then stir in salt, pepper, and the reserved crumbled bacon.

Spoon this mixture over the chicken in the baking dish and sprinkle with cheese.

Bake for 10-15 minutes until chicken reaches 165 F and cheese is melted, then serve.
