Instructions

  1. Preheat oven to 375F (190C).

  2. Cook bacon in a skillet over medium heat for 4-6 minutes until crisp; remove, drain, crumble, and set aside.

  3. Drain most bacon grease from the skillet, then add butter and olive oil.

  4. Sauté chicken breasts in the skillet for 8-10 minutes, turning once, until nearly cooked (150 F internal temperature).

  5. Transfer the chicken to a 13" x 9" baking dish.

  6. In the same skillet, cook onion and garlic for 5-6 minutes until softened, then stir in salt, pepper, and the reserved crumbled bacon.

  7. Spoon this mixture over the chicken in the baking dish and sprinkle with cheese.

  8. Bake for 10-15 minutes until chicken reaches 165 F and cheese is melted, then serve.
