Instructions

Preheat oven to 250 F (121 C).

Prepare a foil-lined baking sheet by spraying it with nonstick cooking spray.

Cook bacon until crispy, drain fat, cool, and coarsely chop into half-inch pieces.

Combine chopped bacon, popcorn, and pecans in a large bowl.

In a small saucepan, combine brown sugar, butter, and corn syrup; stir over medium heat until melted, then insert a candy thermometer.

Cook the mixture until it reaches 238 F (114 C) on the thermometer.

Remove from heat, add baking soda, and stir vigorously; the mixture will foam.

Pour the foamy sugar over the popcorn mixture and quickly stir to coat.

Spread the coated mixture onto the prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.

Cool completely after baking until golden brown and crunchy. Store in an airtight container for up to a week.
