Bacon and Sour Cream Skillet Chicken

Instructions

  1. Preheat the oven to 375F.

  2. Arrange bacon on a rack over a lined baking sheet; cook for 25-30 minutes until crispy.

  3. Drain, dice bacon, and reserve drippings and bits.

  4. Pound chicken breasts to 1/2 inch thickness; season with salt, pepper, and flour on both sides.

  5. Heat reserved drippings and butter in a large skillet over medium heat; brown chicken for 4 minutes per side, then set aside.

  6. Sauté green onions and garlic in the same skillet for 1 minute; remove to a bowl.

  7. Return chicken to skillet, add chicken broth, bring to a boil, then reduce heat, cover, and simmer for 5 minutes.

  8. Uncover, add the onion mixture and diced bacon; cook for 1-2 minutes until hot.

  9. Transfer chicken and bacon to a serving dish.

  10. Stir sour cream into the remaining liquid in the skillet, heating until blended but not boiling.

  11. Pour the sauce over the chicken and bacon, then garnish with parsley.
