Avocado Mac and Cheese
A creamy and lightened macaroni and cheese, this avocado-infused dish with cheddar and cream cheese is an ideal vegetarian dinner.

Instructions

Start boiling a medium pot of salted water.

Cook pasta until al dente (8-9 minutes), reserving 1 cup of pasta water; drain and transfer pasta to a bowl.

While pasta cooks, chop half the cilantro and separate remaining leaves, then shred cheddar cheese.

Mash avocado with lemon juice until smooth.

In the reserved pot, whisk cream cheese, flour, and reserved pasta water over medium heat until smooth (1-2 minutes).

Stir in shredded cheese until melted and sauce thickens (about 1 minute), then season.

Pour cheese sauce over pasta and stir to coat.

Mix in avocado puree and chopped cilantro.

Garnish with remaining cilantro leaves and serve.
