Authentic Turkish Lavas Puff Bread
Lavas, a famous Turkish puffed flatbread popular in kebab houses, can be easily prepared at home.

Instructions

Preheat the oven to 480 F/250 C.

Dissolve active dry yeast in warm water in a large bowl.

Stir in sugar until dissolved, then let the yeast mixture rest in a warm place for 15 minutes until bubbly.

Melt butter, cool slightly, then stir into the yeast mixture.

Combine flour and salt in a separate bowl, then add to the yeast mixture and mix.

Knead the dough in the bowl, then on a floured surface until smooth.

Grease a bowl with olive oil, place dough inside, cover, and let rise for 15 minutes; then knead on a floured surface for another 15 minutes.

Re-oil the bowl, return the dough, and let rise for 2 hours until doubled.

Turn the dough onto a floured surface and flatten it.

Divide the dough into 6 equal pieces, form into balls, cover, and let rise on a floured surface for 15 minutes.

Flatten each dough ball into a very thin disk, using flour to prevent sticking.

Sprinkle with sesame and nigella seeds, then lightly roll to press them in.

Grease two baking trays with olive oil and place 3 dough pieces on each.

Bake for about 8 minutes, or until puffed and lightly browned. For best puffing, bake individually in the oven center.
