Authentic Turkish Lavas Puff Bread

Lavas, a famous Turkish puffed flatbread popular in kebab houses, can be easily prepared at home.

Instructions

  1. Preheat the oven to 480 F/250 C.

  2. Dissolve active dry yeast in warm water in a large bowl.

  3. Stir in sugar until dissolved, then let the yeast mixture rest in a warm place for 15 minutes until bubbly.

  4. Melt butter, cool slightly, then stir into the yeast mixture.

  5. Combine flour and salt in a separate bowl, then add to the yeast mixture and mix.

  6. Knead the dough in the bowl, then on a floured surface until smooth.

  7. Grease a bowl with olive oil, place dough inside, cover, and let rise for 15 minutes; then knead on a floured surface for another 15 minutes.

  8. Re-oil the bowl, return the dough, and let rise for 2 hours until doubled.

  9. Turn the dough onto a floured surface and flatten it.

  10. Divide the dough into 6 equal pieces, form into balls, cover, and let rise on a floured surface for 15 minutes.

  11. Flatten each dough ball into a very thin disk, using flour to prevent sticking.

  12. Sprinkle with sesame and nigella seeds, then lightly roll to press them in.

  13. Grease two baking trays with olive oil and place 3 dough pieces on each.

  14. Bake for about 8 minutes, or until puffed and lightly browned. For best puffing, bake individually in the oven center.

  15. Serve hot.
