Instructions
-
Start by soaking dried red chiles in hot water for 10-20 minutes, then destem, deseed, and finely chop them.
-
Heat 2 tablespoons of oil in a large saucepan; sauté onion and pepper until softened (about 3 minutes).
-
Add tomatoes, chopped chile, garlic, broth, cumin, and oregano; cook for 5 minutes, stirring, then season with salt and pepper.
-
Cover the sauce and keep warm over low heat.
-
Heat additional oil in a medium frying pan over medium-high heat.
-
Cook one corn tortilla for 10-15 seconds, flip, add 1/4 cup cheese to its center, and cook for another 10 seconds until melted.
-
Transfer the cooked tortilla to absorbent paper, then roll the cheese inside.
-
Repeat this cooking and rolling process for all tortillas, adding oil as needed.
-
Serve enchiladas by pouring approximately 1/2 cup of warm sauce over each pair.
