Instructions

  1. Start by soaking dried red chiles in hot water for 10-20 minutes, then destem, deseed, and finely chop them.

  2. Heat 2 tablespoons of oil in a large saucepan; sauté onion and pepper until softened (about 3 minutes).

  3. Add tomatoes, chopped chile, garlic, broth, cumin, and oregano; cook for 5 minutes, stirring, then season with salt and pepper.

  4. Cover the sauce and keep warm over low heat.

  5. Heat additional oil in a medium frying pan over medium-high heat.

  6. Cook one corn tortilla for 10-15 seconds, flip, add 1/4 cup cheese to its center, and cook for another 10 seconds until melted.

  7. Transfer the cooked tortilla to absorbent paper, then roll the cheese inside.

  8. Repeat this cooking and rolling process for all tortillas, adding oil as needed.

  9. Serve enchiladas by pouring approximately 1/2 cup of warm sauce over each pair.
