Authentic Indian Prawn Masala

Instructions

  1. Start boiling water for later use.

  2. Combine garlic paste, cilantro, chilies, lemon juice, and oil in a blender; process into a smooth paste.

  3. Coat prawns in the marinade, then cover and refrigerate while preparing the gravy.

  4. Heat 4 tablespoons oil in a heavy-bottomed pan over medium heat. Sauté chopped onions until pale golden brown.

  5. Add garlic and ginger pastes, sauté for 1 minute. Then, stir in tomatoes, all powdered spices (coriander, cumin, turmeric, chili, garam masala), and salt.

  6. Sauté the masala until oil separates, which may take up to 10 minutes.

  7. Remove the masala from heat, transfer to a food processor, and grind into a smooth paste without adding water.

  8. Reheat the same pan over medium heat. Add the marinated prawns and sauté until they just begin to turn opaque.

  9. Stir in the prepared masala and the boiling water.

  10. Cook for 1 to 2 minutes, turn off heat, and garnish with chopped cilantro.
