Instructions
-
Start boiling water for later use.
-
Combine garlic paste, cilantro, chilies, lemon juice, and oil in a blender; process into a smooth paste.
-
Coat prawns in the marinade, then cover and refrigerate while preparing the gravy.
-
Heat 4 tablespoons oil in a heavy-bottomed pan over medium heat. Sauté chopped onions until pale golden brown.
-
Add garlic and ginger pastes, sauté for 1 minute. Then, stir in tomatoes, all powdered spices (coriander, cumin, turmeric, chili, garam masala), and salt.
-
Sauté the masala until oil separates, which may take up to 10 minutes.
-
Remove the masala from heat, transfer to a food processor, and grind into a smooth paste without adding water.
-
Reheat the same pan over medium heat. Add the marinated prawns and sauté until they just begin to turn opaque.
-
Stir in the prepared masala and the boiling water.
-
Cook for 1 to 2 minutes, turn off heat, and garnish with chopped cilantro.
