Authentic Crema Catalana

Instructions

  1. In a large saucepan, beat egg yolks with 3/4 cup sugar until frothy and well blended, then stir in the cinnamon stick, lemon zest, milk, and cornstarch.

  2. Slowly heat the mixture, stirring constantly, until it thickens, then remove immediately from heat.

  3. Discard the cinnamon stick and ladle the mixture into 4 to 6 ramekins; cool to room temperature, then refrigerate for 2 to 3 hours.

  4. Before serving, preheat the broiler, then sprinkle the remaining sugar over the chilled crema Catalana in each ramekin.

  5. Broil on the top shelf for 5 to 10 minutes, until the sugar caramelizes to golden brown, and serve immediately.
