Australian Shrimp on the Barbie

Instructions

  1. Prepare the barbecue with medium-hot coals.

  2. Peel and devein the shrimp, leaving tails intact.

  3. Mince parsley, thyme, cilantro, and shallots; crush garlic.

  4. Combine melted butter, olive oil, minced herbs, lemon juice, crushed garlic, shallots, salt, and pepper in a large bowl.

  5. Add shrimp and marinate for 15 minutes at room temperature or 30 minutes refrigerated, then discard the marinade.

  6. Thread the shrimp onto skewers.

  7. Grill shrimp skewers for about 2 minutes per side until opaque and firm.

  8. Arrange the grilled skewers on a spinach-lined platter and garnish with lemon.
