Australian Shrimp on the Barbie

Prepare the barbecue with medium-hot coals.

Peel and devein the shrimp, leaving tails intact.

Mince parsley, thyme, cilantro, and shallots; crush garlic.

Combine melted butter, olive oil, minced herbs, lemon juice, crushed garlic, shallots, salt, and pepper in a large bowl.

Add shrimp and marinate for 15 minutes at room temperature or 30 minutes refrigerated, then discard the marinade.

Thread the shrimp onto skewers.

Grill shrimp skewers for about 2 minutes per side until opaque and firm.

Arrange the grilled skewers on a spinach-lined platter and garnish with lemon.
