Aurora Sauce

A creamy tomato sauce, Aurora sauce combines béchamel and tomato purée for versatile use with eggs, vegetables, or pasta.

Instructions

  1. Melt butter and cook onion in a saucepan over medium heat until translucent; season with salt.

  2. Stir in flour and cook for 3-4 minutes until the mixture resembles wet sand.

  3. Gradually whisk in milk, then add nutmeg, bay leaf, and salt. Bring to a boil, stirring frequently, until the sauce thickens.

  4. Remove the béchamel from heat, stir in tomato purée, and simmer for one minute.

  5. Discard the bay leaf and serve immediately, or refrigerate for later use.

  6. Optionally, stir in 1/2 cup grated Parmesan cheese until melted after adding tomato purée and removing from heat.
