Instructions

  1. Heat 3 cups of water or milk in a saucepan with piloncillo or sugar until dissolved, using low heat for piloncillo or milk.

  2. Warm 1/4 cup water and mix with masa harina to form a smooth slurry.

  3. Add vanilla, cinnamon, salt, and the masa harina slurry to the sweetened liquid, stirring for 1 minute.

  4. Bring the mixture to a simmer, then cook, stirring frequently, for 20-25 minutes until it reaches a thick, creamy consistency.

  5. Remove any cinnamon stick or vanilla bean.

  6. Pour into mugs and serve hot.
