Asturian Bean and Sausage Stew (Fabada Asturiana)

A streamlined version of the traditional Fabada Asturiana, this Spanish stew features beans, sausage, ham, and pork, prepared quickly.

Instructions

  1. Start boiling beans in a large pot or bowl covered with cold water; boil for 1 minute, then turn off heat, cover, and let soak for 1 hour.

  2. While beans soak, chop the onion into 1/4-inch pieces and the pork into 2-inch chunks.

  3. Heat olive oil in a large pot over medium heat, then add chopped onions, garlic, and pork; sauté until onions are transparent, then remove from heat.

  4. Drain the soaked beans, then add them to the pot with the sautéed onions and pork. Cover with water, then add bay leaf, sliced chorizo, and Spanish paprika.

  5. Return the pot to high heat; once boiling, reduce to medium and simmer for approximately 1 1/2 hours until the meat is tender.

  6. Season the stew with salt to taste and serve with crusty bread.
