Instructions

  1. Prepare asparagus by snapping off the tough ends.

  2. Chop all other vegetables and set them aside.

  3. Combine all sauce ingredients, except sesame oil, in a cup and mix well.

  4. Heat 2-3 tablespoons oil in a wok or large frying pan over medium-high heat.

  5. Add asparagus and stir-fry for 1 minute.

  6. Incorporate cooking sherry, carrots, and mushrooms, stir-frying for 1-2 minutes until mushrooms are cooked; add a tablespoon of water if the pan becomes dry.

  7. Add spring onions and bell pepper, stir-frying for another minute.

  8. Stir in bean sprouts and the prepared sauce, cooking for 30 seconds to 1 minute to combine.

  9. Remove the wok from heat, drizzle with sesame oil, and toss thoroughly.

  10. Taste the stir-fry and adjust seasoning with additional fish sauce for salt or sugar for sweetness.

  11. Serve hot.
