Asparagus and Carrots With Lemon Sauce

Instructions

Bring 1 inch of water to a boil in a large skillet.

Add carrots to the skillet; cover and simmer for 4-6 minutes until crisp-tender. Remove carrots to a colander and set aside.

Add asparagus to the same water; cover and simmer for 3-5 minutes until crisp-tender.

Drain asparagus in a colander, discard the cooking water, and wipe the skillet dry.

In the same skillet, melt butter over medium heat, then stir in lemon zest, lemon juice, salt, and pepper.

Return carrots and asparagus to the skillet; cook, stirring, for 1-2 minutes until heated through and coated.
